Light, Fluffy, Perfect Pancakes

A little over a year ago, I shared this pancake recipe as a shout out with just a picture that linked to the original recipe on AllRecipes.com. About a month ago, my husband went to make these delightful pancakes and I noticed that the instructions could use some improvement, so I thought I would update things and give a play by play of how I make these incredible pancakes.
Kit's Crafts - Light, Fluffy, Perfect Pancakes
This recipe makes approximately 8 pancakes. It is always the perfect amount for my husband, me and our toddler. If you have a larger family, definitely at least double it. I have adjusted the recipe to make enough for 20 people in one batch and they turned out wonderful. The batter is more of a quick bread and not runny at all. You may be tempted to add extra milk, but refrain. Trust me, they will turn out airy and perfect!

Ingredients:
3/4 cup milk
2 tablespoons white vinegar
3 tablespoons unsalted butter
1 egg
1 cup all purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
butter to grease the pan (you could use cooking spray, but you won't get the golden crispy exterior)

Directions:
Combine the vinegar and milk in a large measuring cup and let sour for about 5 minutes.

Melt the butter over medium heat in a large saucepan. Swirl around to coat the pan, then whisk the excess into the vinegar/milk mixture. Stir in the egg and set aside.

In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt until well combined. Whisk the milk mixture into the flour mixture until just combined. Try not to over mix.

Drop 1/4 cupfuls onto hot pan and flip when bubbles appear on the surface and the edges just start to brown. Grease the pan with butter in between batches.

For a more dessert take on these fluffy delights, add 1/4 cup unsweetened cocoa powder and 1/2 cup powdered sugar. Top things off with Sweet Cream Cheese Butter.
