Ingredients:
3/4 cup milk
2 tablespoons white vinegar
3 tablespoons unsalted butter
1 egg
1 cup all purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
butter to grease the pan (you could use cooking spray, but you won't get the golden crispy exterior)
Directions:
Combine the vinegar and milk in a large measuring cup and let sour for about 5 minutes.
Melt the butter over medium heat in a large saucepan. Swirl around to coat the pan, then whisk the excess into the vinegar/milk mixture. Stir in the egg and set aside.
In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt until well combined. Whisk the milk mixture into the flour mixture until just combined. Try not to over mix.
Drop 1/4 cupfuls onto hot pan and flip when bubbles appear on the surface and the edges just start to brown. Grease the pan with butter in between batches.
For a more dessert take on these fluffy delights, add 1/4 cup unsweetened cocoa powder and 1/2 cup powdered sugar. Top things off with Sweet Cream Cheese Butter.
