If you have never made an icebox cake before, let today be the day to try something new. It is perhaps the easiest cake ever. Essentially you layer cookies with whipped cream or pudding then place it in the fridge overnight and the cream seeps into the cookies making them soft. It is like cookies that are already dipped in milk. So amazing!
Over Memorial Day weekend, we visited the Pepperidge Farm Factory and picked up a rather large bag of discounted Raspberry Milano Cookies that didn't quite meet the Pepperidge Farm standards. I knew that there was no way that our little family could consume the whole bag before the cookies went stale, so I decided an icebox cake was just the thing. (Although I did consider doing a hot chocolate tiramisu....)
Ingredients:
1 package of instant Vanilla Pudding, made according to package directions
4 ounces of Cream Cheese, softened
2 tablespoons Sour Cream
3 - 4 packages of Peppridge Farm, Raspberry Milano Cookies
Directions:
In a large bowl, combine the pudding, cream cheese and sour cream. Using cooking spray, spray the inside of a spring-form pan. Put a thin layer of the pudding mixture in the bottom of the pan, then put in a layer of cookies, breaking them to fill in any gaps. Continue alternating pudding and cookie layers (using enough pudding to just cover the cookies) ending on a pudding layer. Crumble any remaining cookies and sprinkle them over the top. Cover with plastic wrap and place in the fridge overnight.
