1 tablespoon Vegetable Oil
1/2 Onion, chopped
1 pound Ground Meat (beef, pork, poultry, whatever suits your fancy)
1 can Vegetable Beef Soup
1 can Tomato Soup (zesty if you can find it)
1 can Beans (red beans, black beans, garbanzos, whatever you have)
1/4 cup Salsa
1 can (16oz) Tomatoes (I usually shoot for fire roasted)
1 can Hominy (or regular corn, could use frozen if you like)
1 3/4 cups Water
1 tablespoon Taco Seasoning
1 teaspoon Chili Powder
Toppings:
Crushed Tortilla Chips
Chopped Green Onions
Grated Cheese
Sour Cream
Directions:
Heat the oil in a large saucepan over medium heat and add the onions. Cook until they are just starting to get tender. Add the meat and cook until no pink remains. Add the remaining ingredients (except for the toppings, of course) and simmer for 10 to 15 minutes. Serve with your choice of toppings. (Goes really great with some corn bread.)
